This piece is part of a suite, written for a special, ‘long-table’ dinner at the House of Boateng in Langford, British Columbia, just outside of Victoria. Chef Castro Boateng created a dish, to be served after the six main pieces in the suite were performed, each dish inspired by and using ingredients from the same location as the piece. This description set the scene for the audience.
“The tide flows in and out, in and out, leaving behind glassy pools, reflecting the summer sun. You hop from rock to rock, looking in each one, sometimes turning over a rock to see what’s underneath or poke about with a stick. In the pools there are colourful anemones; crabs scuttling sideways; small sculpins darting about; tufts of seagrass swaying. The water shimmers. In every pool, a treasure to be found.”
